Tandoori Machi
Serves 4
Fresh whole bream marinated in delicate spices and grilled slowly in the Tandoor or the oven if you don't have a Tandoor to hand!. Serve on a bed of shredded vegetables
Serve with Chat Masala and garnish of fresh salad.
For the Bream
Clean wash and make 3/4 cuts on bream from both side.
Leave in cold water with 1/2 lemon juice for 10 minute.
Remove from water and dry fish.
Mix all ingredient from first marination and rub on fish on both
sides and leave for 45 minutes.
Mix all ingredients from second marination and mix with fish
and leave for another 45 minutes.
Cook on barbeque or tandoor.
Serve hot on sizzler with salad and lemon.
For the Makai Mutter Chawal
Clean wash and soak rice for 1 hour .
Heat butter in a heavy pan put rice without water and fry for
2 to 3 minutes on slow heat.
Put water, salt and cook on high flame till rice 3/4 done.
slow heat put green peas and sweet corn cover and cook for
another 3/4 minute.
Mix coriander and serve.
For the Tadka
Heat oil in a heavy pan, add cumin seed and crackle it, add heeng
and cook for 20 seconds.
Add garlic and onion and cook until golden brown.
Add tomato, chilli and ginger cook until mashed.
Now pour dal on tomato masala and cook until dal is mashed.
Add coriander and mix well and serve.

2nd marinade
- 120gm yoghurt
- 40ml mustard oil
- 30gm red chilli powder
- 30gm paprika powder

- 30gm cumin powder
- 30gm salt
- 10gm Kasoori Meithei
Makai Mutter Chawal
- 250gm basmati rice
- 12gm salt
- 40gm sweetcorn
- 60gm green peas
- 50gm butter
- 15gm coriander
Tadka
- 30ml oil
- 7gm whole jeera
- 4gm heeng (asfotida)
- 7gm garlic (chopped)
- 1 onion (chopped)
- 2 tomato (chopped)
- 7gm green chilli (chopped)
- 10gm ginger (chopped)
- 10gm coriander (chopped)
