Mili Juli Subzi Seekh
Serves 6-8
Mili Juli Subzi Seekh is a great vegetarian dish, if you don't have your own kitchen tandoor you can grill the skewers instead!
Serve with Chat Masala and garnish of fresh salad.
Method
Peel & cut the potato into 12 pieces.
Separate florettes from cauliflower
Cut each pepper into 6 pieces
Chop the onion into large pieces
Boil water with salt, lemon and turmeric powder
Half boil the cauliflower. Remove them from the water then boil potatoes in the same water until half cooked.
Marinating
Mix all ingredients in a large bowl and whisk for 3 to 4 minutes
Leave marinating for 15 to 20 minutes
Mix all the prepared vegetables in marinade and leave for 10 minutes
Spread vegetables on an iron rod and cook in tandoor/ barbecue for 5 to 6 minutes until they start
browning.
Serve
Mix the shredded ice berg lettuce, cabbage, carrot and half of the coriander with half of the chat
masala.
Put half of the salad in the centre of large plate and the other half spread around the plate
Arrange the cooked vegetables on the plate and sprinkle with coriander and chat masala
Arrange lemon wedges and serve

- 10 medium button mushrooms
- 1 large Potato
- 1 medium cauliflower
- 1 medium green pepper
- 1 medium red pepper
- 1/2 medium onion
- 15 gm salt
- 1/2 medium lemon
- 1/2 tea spoon turmeric powder
Marinade
- 250 gm full fat yogurt
- 50 gm mustard oil
- 20 gm ginger paste
- 25 gm garlic paste
- 25 gm tandoori masala powder
- 20 gm garam masala powder
- 15 gm red chilli powder
- 15 gm paprika powder
- 15 gm Coriander powder
- 15 gm cumin powder
- 10 gm kasoori methi
- 15 gm Salt
Garnish
- 25 gm iceberg lettuce
- 10 gm fresh coriander
- 10 gm cabbage
- 10 gm red cabbage
- 10 gm carrot
- 1 lemon
